How to Maintain Family Dinners

August and September seem to just fly by with the end of summer vacation and the start of school. When school starts, school activities are right behind. They are great but not always great on the family dinner plans.

Nutrition impacts and has such a major role in life. For children, good food helps them grow, learn, and keep developing. For adults, good food can help with weight loss or weight maintenance. It can be part of clear, focused thinking. Lastly, it can help enhance the activities of our daily lives.

In West Point, we have a new extension educator who is ready and willing to help everyone with their nutrition journey. That is Hannah Guenther! Hannah has created a quick, easy, and most importantly delicious recipe for your dinner tonight!

As Hannah says, “MEAL PLANNING. It is something that brings shivers and shudders at the very uttering of its name, but it doesn’t have to be scary. A lot of times a meal is sitting there in your cupboards, fridge, freezer and summer garden it just takes a little creativity and 30 minutes of time to get a healthy meal on the table for your family. “

Beef Teriyaki Lettuce Wraps


1 lb lean ground beef (93/7 or 90/10)

1 bottle of teriyaki sauce

½ lime juiced

¼ cup chopped basil

¼ cup chopped cilantro

2 tbsp chopped mint leaves

1 head of iceberg lettuce

Optional: sesame seeds or chopped peanuts



  1. To prepare lettuce wraps, pull core out with fingers and run water over lettuce to wash. Gently peel lettuce leaves off not to tear and dry completely on paper or kitchen towel
  2. Brown hamburger meat until no longer pink and drain fat
  3. While still in the pan add ¾ cup of teriyaki sauce, lime juice, and herbs
  4. Mix until just combined
  5. Spoon meat mixture into lettuce wrap and top with sesame seeds or chopped peanuts.
  6. Serve with brown rice and stir fry vegetables and enjoy!
